1.Pasta Spirals With Garlic And Chilli:

Ingredients:
250g pasta spirals or sphaghetti or macaroni boiled in lots of water with salt and a dash of olive oil until a la dente,drained and set aside,4-5tbsp good olive oil or to taste,4 dry red chillies sliced thinly and pounded or to taste,2-3 tbsp water,1/2 tbsp finely chopped parsley(optional),salt and pepper to season.

Method:

Heat oil in a pan,add garlic and stir-fry until they start to brown,add pasta and toss well.Sprinkle with chilli flakes,season well with salt and pepper and mix well.Keep stir-frying on high until pasta is well coated.Add water and toss,when the pasta starts to sizzle sprinkle with parsley and toss well. Remove from fire and serve.

2.Penne Aglio Olio:

Ingredients: 400g (3.5cups)Penne(cooked),2.5 tsp olive oil,red chilli flakes,15-20g green chillies,20g garlic,4 tbsp parmesan cheese,a few sprigs of parsley,salt to taste.

Method:

Cook the pasta(penne)in plenty of boiling water for approx 8-10minutes with a little salt and oil.Rinse with cold water and drain well.In a saucepan,heat oil,add chopped garlic,green and red chillies. Saute for 2-3 minutes.Sprinkle salt and toss pasta.Serve hot,garnished with grated parmesan cheese and parsley sprigs or finely chopped fresh herbs.
